This Cabernet was picked at 25.1 Brix on October 5th, 2015. After fermentation it aged in 1 new and 1 used Darnajou French Oak barrel for 18 months. Bright red fruit and a refreshing acidity make this wine perfect with food or enjoying on its own. It does not have chaulky, drying tannins that never seem to calm down with age. Instead, the finish is supple with smooth tannins and a hint of spice box.
