This Cabernet was picked earlier in the season than all previous vintages. This focused the fresh fruit quality of the grapes which came in at 27.1 Brix and 3.77 pH. The grapes were cold soaked for 4 days and innoculated with D254. They were aged in new and used Taransaud, Darnajou, and Gamba French Oak barrel for 18 months.
