This wine comes from Clone 4 Chardonnay planted in 2000 on O39-16 rootstock. These grapes were picked in the wee hours of September 9th at 22.6 Brix, 7.4 TA and a pH of 3.4. To soften the acidity it was 100% barrel fermented and completed malolactic fermentation. 20% new French oak including Damy and Sylvain. Pressed gently 140 gal/ton yield. Stirred on the lees every 8 weeks to round out the palate. This wine was bottled unfined and unfiltered so natural sediment may occur.
